Call me tight, but because I’ve been away most of the week and am away next week, I didn’t want to do any food shopping. Inevitably, whenever I buy food, I don’t eat it, so I lurch between having a full fridge of food I end up not eating, or an empty fridge when I’m really hungry.
It’s amazing what you can feed yourself on when you just use the contents of your cupboards and a bit of ingenuity. So yesterday I found a pack of bacon in the freezer and some eggs just past their date and with the contents of my cupboards and the use of my imagination, I made two lemon cakes and a savoury tart.
I’m a little bit pleased with myself!
